1 Mango Cubed
1 Spring Onion, finely chopped
1-2 red chillies deseeded and finely chopped
Juice of 2 limes/ lemons
1 Cold cooked chicken breast shredded
1 Gem Lettuce torn into pieces
1 cup of chopped coriander
1 teaspoon ground nut oil
1 teaspoon sesame oil
Mix the mango, spring onion, chilli in a bowl and pour over lime juice
Add the rest of the ingredients and toss with the sesame and ground nut oil
Delicious and kind on the hips!
