Lamb Cutlets with Balsamic Pesto

This is a delicious recipe... Enjoy!


1/4 cup chopped thyme
45ml olive oil
Salt and balck pepper
8 lamb cutlets
250g mushrooms


PESTO SAUCE


100ml basil and italian parsley
60ml pine nuts
1 clove garlic
60ml white balsamic vinegar
salt & pepper


1. Grind Thyme, oil and seasoning with a mortar and pestle
2. Rub mixture over lamb and mushrooms
3. Heat a saucepan and cook the chops for 3-4 minutes on each side depending on thickness
4. Add mushrooms and fry until cooked through


PESTO SAUCE


Blitz all ingredients together


Serve chops with the pesto and mushrooms and a rocket and parmesan salad
