Looking forward to a high of 24 degrees in the City of Gold today and clear skies!
Just have time to jot down a quick and easy recipe for all of you to try. Rushing off to a breakfast at the Westcliff Hotel this morning - will give you the low down later.
YUMMY LINGUINE WITH BASIL & TOMATOES
1 Pkt of Linguine
1 Tblsp of Salt
1/2 cup of olive oil (buy the best you can afford, but please don't buy Pomace Oil - it tastes terrible)
2 pkts of Cocktail Tomatoes (I like the ones from Woolies)
1Tblsp crushed garlic
2Tblsp red wine vinegar
1 tsp Paprika (the Robertson Paste is the best) or chilli flakes if you are feeling brave
Salt & Pepper to taste
18 Basil Leaves, julienned
3/4 cup of Parmesan Cheese
1. Boil the pasta with the salt
2. Heat olive oil in a pan, add tomatoes and garlic. Cook until tomatoes are soft. Remove from heat and stir in vinegar and paprika
3. Drain pasta, add to pan and cook until the pasta is coated and hot. Remove from heat and season with salt and pepper.
4. Stir in basil and cheese.
